As the temperatures drop and chores get heavier with harvest season, there’s nothing better than a warm bowl of homemade stew simmering on the stove. This Beef & Vegetable Stew is one of our family favorites — simple, wholesome, and made even better with our grain-finished Shorthorn beef.

Packed with tender stew meat, hearty vegetables, and slow-simmered flavor, it’s the perfect comfort meal for busy families, meal preppers, and anyone looking for a nourishing fall or winter dinner.

Our Shorthorn cattle naturally produce tender, well-marbled beef with rich flavor — the kind you can taste in every bite. Because we raise them right here on our Missouri farm with hay, silage, and grain we grow ourselves, you get clean, consistent, high-quality beef every time.

🧅 Ingredients

  • 1–1.5 lbs Luebbering Shorthorn stew meat or chuck roast, cubed
  • 2 tbsp olive oil
  • 4 cups beef broth
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 celery stalks, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • Optional: bay leaf

👩🍳 Instructions

  1. Heat olive oil in a large pot or Dutch oven and brown the beef on all sides.
  2. Add the onion and garlic; sauté until softened and fragrant.
  3. Stir in tomato paste, salt, pepper, and thyme.
  4. Pour in the broth and add carrots, potatoes, celery, and the bay leaf.
  5. Bring to a boil, then reduce heat and simmer 60–90 minutes, until the beef is tender.
  6. Stir in peas and cook 5 more minutes.
  7. Remove bay leaf, serve warm, and enjoy!
