No Box Hamburger Helper: A Farm-Fresh Take on a Classic


If you grew up in the Midwest like I did, there’s a good chance Hamburger Helper was a regular dinner staple. I can still remember the comfort of sitting down to a warm skillet of cheesy noodles and beef after school or on busy nights.

The reason it worked so well? It was quick, it was filling, and it used one thing we always had on hand—a freezer full of beef.

Now that I’ve got a family of my own, I still love the simplicity of those meals, but I wanted something that was higher in protein, lower in preservatives, and made with real ingredients I can trust. That’s how our No Box Hamburger Helper series was born.

No Box Hamburger Helper: The Basics

Our homemade version is just as quick as the box. Here’s the base recipe for Classic Cheeseburger Skillet:

Ingredients:

  • 1 lb Luebbering Shorthorn ground beef
  • 2 cups pasta (elbow, shells, or whatever you have)
  • 2 cups beef broth
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • Salt & pepper to taste

Directions:

  1. Brown your ground beef in a large skillet, drain if needed.
  2. Stir in the pasta, broth, milk, and seasonings.
  3. Cover and simmer until the pasta is cooked through (about 10–12 minutes).
  4. Stir in shredded cheese until melty and creamy.

Serve it up hot and watch it disappear—just like the old days, but better.
