Ingredients
- 1 lb Luebbering Shorthorn ground beef
- 2 cups pasta (small shells or elbows work great)
- 2 cups beef broth
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 1 packet taco seasoning (or 2 tbsp homemade mix)
- Salt & pepper to taste
- Optional toppings: sour cream, diced tomatoes, green onions, cilantro
Directions
- Brown ground beef in a large skillet. Drain if needed.
- Stir in pasta, beef broth, salsa, and taco seasoning. Cover and cook 12–14 minutes, stirring occasionally, until pasta is tender.
- Remove from heat, stir in cheese until melted.
- Top with your favorite taco fixings and serve.
