Simple Beef Soup for Cold Winter Days

There’s nothing better than a pot of soup simmering on a cold January day. This simple beef soup uses basic ingredients and works well with whatever vegetables you have on hand.
Ingredients
- 1 lb stew beef or ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 4 cups beef broth
- 1 can diced tomatoes
- Salt and pepper to taste
- Optional: potatoes or frozen vegetables
Instructions
- Brown beef in a large pot.
- Add onion and garlic and cook until softened.
- Stir in vegetables, broth, and tomatoes.
- Simmer 30–45 minutes.
- Season to taste.
