When chores take longer, the days get colder, and everyone is asking “what’s for dinner?” — this Stuffed Pepper Casserole is one of our go-to meals on the farm. It has all the flavor of classic stuffed peppers, but without the extra steps of cutting, stuffing, and baking whole peppers.

This recipe is warm, hearty, budget-friendly, and perfect for busy families who want a wholesome dinner on the table fast. And like all good comfort food, it tastes even better the next day.

🧅 Ingredients

  • 1–1.5 lbs Luebbering Shorthorn ground beef
  • 1 tbsp olive oil (if needed)
  • 1 medium onion, diced
  • 2–3 bell peppers, chopped (any color)
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 2 cups cooked rice (white or brown)
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • ½ tsp black pepper
  • 1–2 cups shredded cheese (mozzarella or cheddar)

👩🍳 Instructions

  1. Preheat oven to 350°F.
  2. In a large skillet, brown the ground beef with the onion and garlic. Drain if needed.
  3. Add chopped bell peppers, diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper.
  4. Let the mixture simmer for 5–7 minutes, softening the peppers and blending the flavors.
  5. Stir in cooked rice until everything is fully combined.
  6. Transfer the mixture to a greased 9×13 baking dish.
  7. Sprinkle shredded cheese over the top.
  8. Bake for 15–20 minutes, or until the cheese is melted and bubbly.
  9. Serve warm and enjoy — or let it rest and portion it for easy leftovers throughout the week.
